Banana Bread

Dry ingredients

½ cup coconut flour

1 tsp bicarbonate of soda

1 tsp cinnamon

A dash of sea salt

Wet ingredients

4 large organic eggs

1/3 cup melted coconut oil

1 tsp vanilla extract

4 medium bananas (ripe & mashed with a fork)

¼ cup honey


  1. Preheat the oven to 180C
  2. Line a loaf tin with a greaseproof liner
  3. Whisk together the dry ingredients in a bowl and place to one side
  4. Melt the coconut oil and add the honey
  5. Add this to the bowl of dry ingredients and mix in the remaining ingredients
  6. Mix well and pour in to the prepared loaf tin
  7. Bake for approx. 1 hour until a skewer comes out clean
  8. Allow to cool, slice & enjoy

(slices can be frozen if wrapped in clingfilm)
