Ingredients

1 cup gluten free Oats

1 cup Quinoa flakes

1/2 cup Buckwheat groats

1/2 cup Pumpkin seeds (you can also use sunflower or mix the two)

1 cup of Hazelnuts, Pecans, Brazil Nuts or a mix

2 tbsps dried shredded Coconut (not dessicated)

1-2 tsps ground Cinnamon

Small pinch of Himalayan Salt or fine Natural Sea Salt

4 tbsps (heaped) virgin Coconut Oil

1 tsp Vanilla Extract

2 tbsps Chia seeds

Method

1. Preheat the oven to 180C

2. Place all the dry ingredients (except the chia seeds) in a large bowl and mix well (you may want to chop the nuts roughly first)

3. Place the coconut oil in a small pan and melt gently.  Remove from the heat and add the vanilla extract

4. Pour the melted oil/vanilla into your bowl and mix thoroughly to ensure all the ingredients are well coated

5. Pour onto a non stick baking tray and place in the oven

6. After 10 minutes stir the mixture gently on the baking tray so that all of the mixture brown

7. Place back into the oven for about 5 minutes – be careful to ensure it doesn’t burn (all ovens are different!)

8. Pour back into your bowl. Add the chia seeds and mix well, then leave to cool

9. Once cool you can store in an airtight container for approximately 2-4 weeks

10. Serve with home made Almond or Cashew Milk and fresh berries, or sprinkle on top of fresh fruit and coconut yoghurt

I have made this recipe free of dried fruit or any natural sweetener, so that it suits all including those looking to omit any sugar.

If you want to add a little sweetness though, you could replace one of the tbsps of coconut oil, with a tbsp of coconut blossom nectar, or add some chopped dried dates or dried un-sulphured apricots into the granola at the same time as the chia seeds.
