Raw Vanilla Cacao Truffles

(Makes approx. 10-12 balls)

Raw Cacao truffles


1 cup dates

½ cup walnuts

½ cup cashew nuts

2 tbsp raw cacao powder

½ cup shredded coconut

¼ cup maple syrup or brown rice syrup (optional, if not using, add ¼ cup melted coconut oil instead)

1 tsp vanilla extract

1 tsp almond extract

½ tsp Himalayan pink salt

1-2 tbsp raw cacao nibs


  1. In a food processor blend together the dates, walnuts & almonds until it forms a crumble like paste and comes together (add a tiny drop of water if it needs help)
  2. Add the raw cacao powder and pulse together
  3. Remove from the food processor and place in a bowl
  4. Fold in the remaining ingredients by hand
  5. Shape in your hands into small balls and roll in more shredded coconut if desired
  6. Place on a baking tray lined with greaseproof paper and place in the freezer
  7. Once frozen they can be transferred to an airtight container
  8. They are best kept in the freezer, and can be eaten straight from the freezer or left for a few minutes before eating
